I was trying to come up with a healthier alternative to instant ramen noodles, which brought me to this simple broth. Those instant flavoring packets (as tasty as they are) are often not vegan and may include questionable ingredients with high sodium. A basic vegetable stock combined with nooch and some chili flakes is my go-to combo that hits the spot. Sometimes I eat it as is while other times if I’m feeling fancier, I’ll throw in some leftover rice and cooked veggies. It also pairs great with a sandwich or vegan grilled cheese.
