I was craving tomato soup one day but don't typically buy the pre-made stuff. I also rarely have the energy or motivation to get fancy and make a batch from scratch. This version uses basic ingredients, such as canned tomato paste and canned coconut milk. I simply heat them together until incorporated into a creamy soup and add whatever spices I have on hand. It goes well with crackers or vegan grilled cheese! It can also be used as a sauce for pasta or dip for breadsticks or pizza crust.
- 1 can coconut milk
- 1 small can tomato paste/puree
- chili flakes
- garlic powder
- Italian seasonings
- nutritional yeast
- Empty contents of both cans into a saucepan
- Simmer on low while continuously stirring until creamy, bubbly, and well-incorporated
- Season to taste
- Serve and enjoy!
