This Vegan Quiche is the perfect vegan-friendly holiday dish the whole family will love!

Ingredients
- 1 bottle JUST Egg
- 1/4 cup sliced leeks
- 1 bulb green garlic
- 1/4 cup heirloom cherry tomatoes halved
- 1/2 cup Violife feta cheese
- 1/3 cup sliced mushrooms
- 1 tsp black salt
- 2 tbsp herbs de Provence
- 1 cup spinach
- 1 tsp smoked paprika
- 1 pre-made vegan pie crust
- fresh ground pepper
Instructions
- Preheat oven to 375 F.
- Chop and add all ingredients into mixing bowl.
- Add JUST egg and spices, mix well.
- Pour until pie crust is almost full, leaving a little room at the top.
- Bake for 45 minutes to an hour, until JUST Egg starts to brown on the top.
- Let cool for 10 minutes before slicing and serving.
- Garnish with parsley and avocado for extra vegan love!
